SEONA CANDY is a researcher in sustainable food and urban systems at the Helsinki Institute of Urban and Regional Studies (Urbaria) at the University of Helsinki. CARLOS HENRIQUES studied hospitality management and quickly discovered his passion for cooking. He is one of the co-founders of Restaurant Nolla, Helsinki’s first zero-waste restaurant. He will be sharing his perspective on sustainable practices and how to start.
